snapping turtle chowder recipie
A 12-16 lb snapping turtle will yield around 4-6 lbs of meat—(8-12 servings).
Ingredients:
· *4-6 lb of turtle meat
· 1 large chopped onion
· 4 chopped potatoes
· 4 chopped carrots
· 10 ounces of cream
Seasoning Mix:
· 2 teaspoons of white pepper
· 2 teaspoons of black pepper
· 1 teaspoon of red pepper
· ½ teaspoon of celery salt
· 1 tablespoon of salt
Put the meat (bone in) in a 2 gallon pot and fill with water. Bring to a full boil for 15- 20 minutes. Pour this water off and discard. This boil is called the “second wash”—it boils any mud and impurities off of the meat.
Refill the 2 gallon pot with 1 ½ gallons of water. Place the turtle meat, 1 large, chopped onion, and seasoning mix in the pot. Let this mixture slow boil, or simmer, for 5-6 hours. The meat will break apart and fall off of the bone during this slow boil—remove the bones and discard. In the last 20 minutes, add the chopped potatoes, chopped carrots, and cream. The cream and vegetables will help to thicken up the mixture. The stew will take on the appearance of clam chowder.
turtle chowder is a delicious, hearty meal for the entire family.
